Ingredients

Oat Flour – This is great for the satiating factor because they are full of fibre.

Baking Soda – This is what is going to make them nice and fluffy.

Apple Sauce – Makes for a great oil substitute and keeps the pancakes low in fat.

Almond Milk

Lemon – Helps to make the pancakes get a fluffy texture.

Stevia – To keep it more whole food, you can substitute it with maple syrup or agave.

How to make them

  1. First, depending on if you make the oat flour or buy it, blend up rolled oat in a food processor or coffee grinder. Then whisk together the flour and baking soda until combined.

2. Pour in the apple sauce, milk, lemon and sweetener of choice.

3. Whisk together with a whisk until you achieve a smooth batter. If you make it ahead of time, add in a few splashes of milk until the consistency of the batter is not too thick.

4. Heat a large non-stick pan over medium heat. To be completely oil-free make sure you have a good non-stick pan. If you do not have a good non-stick pan, use a little cooking spray to prevent them from sticking. Cook until bubbles form at the top of the pancakes, flip and cook for about another minute.

Pancake variations

For blueberry pancakes, add 1/2 cup of fresh blueberries to the batter. Using frozen wild blueberries are delicious as well but they will most likely turn the batter blue.

For chocolate chip pancakes, add in a few morsels of your favorite non-dairy chocolate chips. This will make the pancakes more calorie-dense, but great for special occasions.

For banana nut pancakes, pour the batter into the pan and top with a few slices of banana. Once cooked, top with a drizzle of PB fit peanut sauce. PB fit is much lower in calories and fat, so you can still enjoy that nutty peanut flavor.

  • 1 1/2 cups oat flour
  • 2 tbsp baking powder
  • 1/2 cup apple sauce
  • 1 cup almond milk any non-dairy milk will do
  • 1 tsp vanilla
  • 1/2 lemon
  • A few drops Liquid Stevia Can substitue for 2 tbsp coconut sugar

Instructions

Batter

  • If you don't want to buy premade oat flour, you can make it in a high speed blender, food processor or even a coffee grinder.
  • Mix dry ingredients in a bowl first, then add wet ingredients and mix to stir. Don’t over mix.
  • Heat up a non-stick pan and measure out a 1/4 cup of batter.
  • Pour batter onto pan and let cook for 2-3 minutes or until bubbles start to form. That's when you know to flip.
