There are so many fun and creative ways to get in your morning bowl of oats. Whether you top it with your favorite toppings, leave it in the refrigerator overnight, or bake to make a breakfast cake. The possibilities are endless. This is why I want to share my new obsession, chocolate baked protein oats with no banana! This recipe is rich in chocolate flavor, packed with filling protein, and beyond easy to make.

Why We Love Chocolate Baked Protein Oats

Easy. This unique spin on oatmeal is super easy to whip up. Throw everything in a blender then bake!

High Protein. With the addition of protein powder, this meal becomes a great high-protein go-to breakfast.

Low Fat. There is no oil or butter needed in this recipe making it a great low-fat option.

Whole Ingredients. Not only is this recipe healthy, but it is also, vegan, gluten-free, and dairy-free.

Ingredients Needed

Old Fashioned Rolled Oats – to blend into homemade oat flour.

Protein Powder – any protein powder you love will do the trick. We love using the Plant Fusion Creamy Vanilla Protein Powder.

Cocoa Powder – chocolate anything would not be complete without a good cocoa powder.

Milk – we like using unsweetened soy milk but any unsweetened plant milk will do.

Maple Syrup – for an added bit of sweetness.

Chocolate Chips – the mini chocolate chips work the best but use whatever chocolate you have on hand.

Apple Sauce – this will act as our egg replacer to make the recipe vegan.

Baking Powder – to help make the recipe nice and fluffy.

How to Make Chocolate Protein Baked Oats

Preheat your oven to 350 degrees.

Blend your oats in a high-speed blender to create a fine flour. Make sure the oats are finely ground and resemble flour for a smoother batter.

Excluding the chocolate chips, add all remaining wet and dry ingredients and blend till combined. To make sure everything is fully mixed together, use a spatula and scrape the sides to make sure everything is incorporated.

Once the batter is made, lightly spray a small ramekin or bowl with cooking spray. This ensures the oats don’t stick and makes for easier cleanup. Then, pour the batter into the ramekin and top with mini chocolate chips. Then using the tip of a knife, lightly swirl the chocolate chips into the batter. Bake at 350 degrees for 20-25 minutes.

Remove oats from oven and allow to cool. I love pouring a little milk on top to make the oats extra moist. Enjoy!
