Ingredients

  • 1/2 Package Vanilla Instant Vegan Pudding Whole Foods is vegan
  • 1/2 Package Chocolate Instant Vegan Pudding
  • 2 cups Non-dairy milk
  • 1/2 pint Strawberries
  • 1/2 pint Raspberries
  • 1 tbsp Coconut sugar
  • 1/2 Lemon

Instructions

Pudding

  • Make instant pudding mix according to the package instructions.
  • Once the chocolate and vanilla pudding is made, place in the refrigerator to get cold.

Strawberry & Raspberry Layer

  • Wash and cut the berries and put them in a non-stick pot. Add in the coconut sugar and lemon juice.
  • Turn the heat to medium and with the back of a spoon, mash the strawberries to make a jam texture. The strawberries take about 5-8 minutes to reduce. Once the berries finished cooking down, set in the refrigerator to cool.

Assembly

  • Once the pudding and berry layer is fully cool, now you can start the layering process.
  • Layer about 3 tbsp of one flavor of pudding, then the other and finally lay in the strawberry raspberry layer.
    Repeat process twice and enjoy!

Notes

If you don’t want to make the strawberry raspberry layer, you can easily substitute with fresh berries or sugar free jam.
