Creamy Broccoli Salad

Ingredients

  • 3 heads broccoli
  • 1/2 red onion
  • 1 cup quinoa
  • 1 cup shredded carrot
  • 2 tbsp chopped walnuts
  • 1 cup grapes

Creamy Dressing

  • 1 cup cauliflower
  • 1/2 cup white beans
  • 1 tbsp nutritional yeast
  • 1 lemon juice
  • 1-2 garlic cloves
  • 1/4 cup soy milk
  • 1/4 tsp salt
  • pepper to taste

Instructions

  • Chop the broccoli into very small pieces and place into a large bowl.
  • Then chop the onion and slice the grapes in half.
  • Add the remaining ingredients with the broccoli.
  • Cook the quinoa and add into the bowl. Once the dressing is made, pour in the broccoli mixture and mix well to combine.

Creamy Dressing

  • Place all the ingridents in to a food processor or high speed blender.
  • Blend until thick and creamy. You can steam the cauliflower first to make the dressing belnd easier.
