Monster Cookies

These chocolatey and chewy monster cookies are a gluten free and vegan dessert everyone loves!

Ingredients

  • 1/2 cup peanut butter
  • 1/4 cup plus 2 tsp coconut sugar
  • 2 tbsp plus 1 tsp oat flour
  • 1 tsp baking soda
  • 1/4 cup rolled oats
  • 1/4 cup chocolate candies
  • 1 tbsp flax mill
  • 1 tsp vanilla

Instructions

  • Mix together the dry ingredients in a large bowl and set aside.
  • Now make the flax egg. It's just 1 tbsp of flax mill to 2 tbsp of water whisked together. Just let it sit until the water is fully absorbed.
  • In a seperate bowl, whisk together the peanut butter, coconut sugar, vanilla, flax egg.
  • Combine the wet to the dry ingredinets and stir until combined. Then add in the rolled oats and chocolate candies and mix in.
  • Using a tablespoon, scoop out the cookie dough and form into a ball. Place onto a baking sheet lined with parchment paper and lightly flatten the dough.
  • Bake at 350 for 10-12 minutes and enjoy!
