TikTok does it again. It turned up the volume to your run-of-the-mill corn on the cob. These miso glazed corn spare ribs will certainly spice up any BBQ scene or work well as a fun side dish. Goodbye boiled corn on the cob and hello miso glazed corn spare ribs.
Much like any food trend, people go gaga for it. Even the Pioneer Woman herself is getting in on the action! These things are literally everywhere and for good reason, THEY ARE AMAZING! Since I am vegan and oil-free, I came up with a delicious corn short rib recipe that any corn lover will crave.
While traditionally corn ribs are made in an air fryer, you can certainly make them an oven-baked corn rib which turns out just as crispy and delicious. The corn ribs in the oven do take a little bit longer to crisp up, but it is totally doable and you won’t even notice a difference.

A Few Notes on The Recipe:
Much like any recipe, you can easily substitute/modify it to your preferred taste. Here are some suggestions that could be swapped or altered:
• Miso paste, while a delicious ingredient, could be swapped with soy sauce. The umami and salty flavor of soy sauce would work great as well.
• If cutting the corn vertically freaks you out, you can either cut the corn in half first. This makes it easier to cut smaller pieces or you could use frozen kernels. For the frozen kernels, you would add the kernels to the glaze and cook the corn in a pan. Equally as delicious and also makes a great side dish.
• In the glaze, I did use a little bit of raw honey but that could easily be swapped out. You could use your favorite liquid sweeteners like maple syrup or agave syrup. Alternatively, you could omit it all together to be sugar-free.
How to make miso glazed corn spare ribs
Firstly, preheat your oven to 375 degrees Fahrenheit.
Then, we are going to cut the corn into its rib-like shape. This is very simple but could be difficult if not using a sharp knife. You are going to stand the corn up vertically and cut down the middle of the core to make two pieces. Then, you are going to cut the half down the middle of the halved piece to make four “ribs” per ear of corn.
Once the corn is cut, you can quickly whip up the glaze. In a small bowl, whisk together the miso paste, garlic powder, honey, paprika, and lime juice. Then, lay the corn ribs out on a baking sheet lined with parchment paper and brush the corn with the miso glaze.
Cook at 375 for 25-30 minutes or until crispy and the corn starts to curl.
To serve, squeeze on some lime juice and sprinkle a little Maldon flaky sea salt AND ENJOY!
Miso Glazed Corn Short Ribs
Ingredients
- 4 ears corn
- 1 tbsp miso paste
- 1 tsp raw honey can sub with maple sryup
- 1 tsp garlic powder
- 1 tsp paprika
- 1 lime
- 1/4 tsp himilayan pink salt optional
Instructions
Cutting the corn
- Standing the corn up vertically, cut the corn with a sharp knife down the middle making two pieces. Then, take one of the cut pieces and cut it down the middle again.
- By cutting the corn vertically, it prevents the curnels from getting squished. Make sure to use a sharp knive for easy cutting.
Glaze
- In a small bowl, whisk together the miso paste, honey, garlic powder, paprika and lime juice.
- Using a brush, brush the glaze all over the corn ribs.
Cooking
- Preheat oven to 375 degree and Line a baking sheet with parchment paper. and lay corn short ribs out with a little space between each rib.
- Baked the corn short ribs for about 25-30 minutes or until crispy and the corn starts to curl. Alternatively, you can cook the corn ribs in an airfryer at 375 degrees for 12-15 minutes.
