These oil-free tostadas are a great starch solution, whole-food plant-based, and low-fat alternative to traditional tostadas.

They have all the big Mexican-inspired flavor of a traditional tostada but with way, fewer calories and they are super easy to make. Whenever I don’t know what to make for lunch, these tostadas always pop into my head because you can literally make them in 10 minutes or less. The toppings can vary depending on what you have in your refrigerator, so the possibles are endless.

Ingredients for Oil-free Tostadas

Corn tortillas

Fat-free refried beans

Shredded cabbage

Vegan cheese sauce

Avocado

Pickled Cabbage

Corn

Jalapeños

Tomatoes

Green Onion

Lime Juice

How to make Tostadas

Admidily, this recipe is a bit of a cop-out because it is beyond easy to make. If you don’t like cooking, then this meal is for you.

Take two corn tortillas, I like the Trader Joe’s or Food for Life brand and cook in an air-fryer for 8 minutes at 375 degrees. This gets the tortillas super crispy without the use of oil. If you don’t have an air fryer, you can do the same thing in a 350-degree oven. You just need to flip the tortilla halfway through the cooking process.

Once your tortillas are crispy, open a can of fat-free refried beans of choice. I personally love pinto beans but you could also do black beans. You should be able to find oil-free, fat-free beans at any grocery store but you could also blend or mash whole canned beans by hand to create a homemade version.

Taking about 1-2 spoon fulls of the beans, spread a layer on the crispy corn tortilla ‘tostada’. From there, just layer with your favorite toppings.

I generally go for corn, shredded cabbage, diced tomatoes, and vegan cheese sauce. You can add as many or as few toppings as you would like. And that’s it! I told you it was simple but oh so delicious.

You can serve yourself a side salad to create a 50/50 plate and that’s lunch or dinner folks!
