Not only is this broccoli salad vegan, but it is completely whole food plant-based, and oil-free. This salad is full of fiber and a great source of plant-based protein. It also makes a great meal prep salad but it can stand staying in the refrigerator for up to 3-4 days.
Broccoli SALAD Ingredients
- Broccoli
- Red Onion
- Grapes
- Shredded Carrot
- Quinoa
Creamy Cauliflower Dressing Ingredients
- Cauliflower
- White Beans
- Garlic
- Lemon Juice
- Soy Milk
- Nurtional Yeast
- Salt
- Pepper

Creamy Broccoli Salad
Ingredients
- 3 heads broccoli
- 1/2 red onion
- 1 cup quinoa
- 1 cup shredded carrot
- 2 tbsp chopped walnuts
- 1 cup grapes
Creamy Dressing
- 1 cup cauliflower
- 1/2 cup white beans
- 1 tbsp nutritional yeast
- 1 lemon juice
- 1-2 garlic cloves
- 1/4 cup soy milk
- 1/4 tsp salt
- pepper to taste
Instructions
- Chop the broccoli into very small pieces and place into a large bowl.
- Then chop the onion and slice the grapes in half.
- Add the remaining ingredients with the broccoli.
- Cook the quinoa and add into the bowl. Once the dressing is made, pour in the broccoli mixture and mix well to combine.
Creamy Dressing
- Place all the ingridents in to a food processor or high speed blender.
- Blend until thick and creamy. You can steam the cauliflower first to make the dressing belnd easier.
