Ingredient Notes

Chickpeas: If you’re not a chickpea lover or don’t have any on hand, then you can substitute with your favorite bean of choice. This recipe makes for delicious black bean burgers.

Spices: There are a plethora of spices to choose from to tailor your chickpea burgers to your liking. For a smoky flavor you could use smoked paprika or for an Indian twist, you could use curry. The possibilities are endless.

Toppings: Some of my classic favorite burger toppings are my homemade vegan cheese sauce, creamy avocado, red onion, thick slices of tomato, and pickles

How to make the patties

Step 1

Preheat oven to 350 degrees.

Step 2

Add one and a half cups of rolled oats to a high-speed blender. Blend on high until the oats are fully broken down and resemble flour. Then transfer the homemade oat flour to a separate bowl. If you have store-bought oat flour, then you can skip this step.

Once you have removed the oat flour from the blender, add in 1 can of chickpeas (drained and rinsed), 2 cups of sliced mushrooms, 1 garlic clove, 1 tablespoon of creamy peanut butter or almond butter, 1 teaspoon of soy sauce and spices of choosing. I love adding 1 teaspoon of harissa powder, 1 teaspoon of paprika, 1 teaspoon of onion powder, and salt and pepper to taste.

Step 4

Blend together until fully combined. The mixture won’t be fully smooth, but there shouldn’t be any large chunks. Depending on the type of blender or food processor, you may need to stop blending to scrape down the sides to help the blender blend.

Pour the chickpea mixture into a separate bowl. Add oat flour into the mixture and mix using a rubber spatula. If the batter is still tacky to the touch, add 1-2 tablespoons of flour. The mixture is naturally on the wet side, so if it sticks to your hands slightly, that’s okay.

Step 6

Line a baking sheet with parchment paper. To form the patties, lightly spray or oil your hands to prevent the batter from sticking. Then using a spoon, scoop out 2 spoonfuls of the mix and roll it into a ball.

This should make about 6 chickpea patties. To flatten, lightly press them with your hand to about a 1/4 of an inch.

Step 6

Bake at 350 for 18-20 minutes. The patties will be golden brown and feel firm to the touch. Serve them up with all your favorite burger fixins’ and enjoy!

Storage & Reheating

Storage: Store leftover chickpea patties in an air-tight container in the refrigerator for 3-4 days.

Freezing: Place in a Ziploc plastic bag and get out all the air. Then freeze for up to a month.

Reheating: There are a few ways to reheat the patties. Place in the microwave for 1 minute, place on a skillet over medium heat until fully heated up, or place in the air-fryer for 5 minutes at 350.

SUBSTITUTIONS:  
Beans: 
The type of bean in this dish can be swapped. I personally love the creamy texture of chickpeas but alternate beans like black beans, kidney beans, or navy beans work, but it will slightly change the flavor, as well as the color. 
Spices: 
Add your favorite spices to make the patties your own. Some ideas: Adding curry and cumin to give it an Idian flare or you could use taco seasoning to give it a Mexican twist.

How do you keep chickpea burgers from falling apart?

Make sure the batter isn’t too wet. Adding more oat flour will help the mixture bind together, which will help prevent the patties from falling apart.

Baking the patties as opposed to on a skillet takes flipping the burgers out of the equation, which often leads to patties crumbling.

Can you freeze homemade chickpea burgers?

Yes, and it is incredibly easy to do so. Once the patties have cooled completely after being baked, place them in a Ziploc bag and make sure to release all the air. They can stay in the freezer for up to a month.
