easy tofu spring rolls

Fresh tofu spring rolls are a type of Vietnamese cuisine that typically consists of a translucent rice paper wrapper filled with vegetables, herbs, and sometimes a protein source. The rolls are often served cold or at room temperature and are usually accompanied by a dipping sauce such as hoisin sauce or peanut sauce.

To make fresh rolls, first, soften the rice paper wrappers by briefly dipping them in warm water for 30 seconds. Then, place a selection of vegetables and herbs such as lettuce, cucumber, and green onion in the center of the wrapper, leaving some space at the top and bottom. You can also add tofu if desired.

Next, fold the sides of the wrapper over the filling, then fold the bottom of the wrapper up over the filling and roll it up tightly. Repeat the process with the remaining wrappers and filling.

To serve, cut the rolls in half and serve with your desired dipping sauce. Fresh rolls make a delicious and healthy appetizer or light meal.

  • Rice paper wrappers
  • Carrots, julienned
  • Cucumber, julienned
  • Bell pepper, julienned
  • Lettuce or mixed greens
  • Bean sprouts
  • Fresh mint leaves
  • Fresh green onion
  • Firm Tofu

Instructions:

  1. Prepare the filling ingredients by washing and chopping the vegetables and herbs, and or tofu if using.
  2. Fill a large shallow dish or pie pan with warm water.
  3. Place a rice paper wrapper into the warm water and let it soak for 15-30 seconds until it becomes soft and pliable.
  4. Remove the rice paper wrapper from the water and place it onto a clean, damp kitchen towel or cutting board.
  5. Place a small amount of each filling ingredient in the center of the wrapper, leaving enough space on the sides to fold the wrapper.
  6. Fold the sides of the wrapper over the filling, then fold the bottom of the wrapper up over the filling and roll it up tightly.
  7. Repeat the process with the remaining wrappers and filling ingredients.
  8. Serve the spring rolls with your favorite dipping sauce, such as hoisin sauce, peanut sauce, or sweet chili sauce.
