If you are a chocolate peanut butter lover, then you are going to love these cookies. These cookies get their sweetness from the maple syrup and fat content from the peanut butter. It is a much healthier option than your traditional monster cookie.

- Rolled Oats. Iconic in a monster cookie.
- Vegan Chocolate Candies. The brand Unreal has great vegan chocolate candies. The most similar to M&Ms.
- Flax Egg. This helps to bind the cookies together because the flax creates a gel like effect.
- Vanilla. You can use powder or extract for this recipe.
How to make monster cookies
These monster cookies are super easy to make and uses minimal ingredients. Much like any cookie recipe, you want to combine the dry ingridents in a separte bowl from the wet. Mix seperately and then combine together. Once the dough is made, add in the chocolate and rolled oats.
Using a tablespoon, scoop out the dough and form a ball. Place the cookie dough balls on a baking sheet lined with parachment paper and press down to flatten the dough.
Monster Cookies
Materials
- 1/2 cup peanut butter
- 1/4 cup plus 2 tsp coconut sugar
- 2 tbsp plus 1 tsp oat flour
- 1 tsp baking soda
- 1/4 cup rolled oats
- 1/4 cup chocolate candies
- 1 tbsp flax mill
- 1 tsp vanilla
Instructions
- Mix together the dry ingredients in a large bowl and set aside.
- Now make the flax egg. It's just 1 tbsp of flax mill to 2 tbsp of water whisked together. Just let it sit until the water is fully absorbed.
- In a seperate bowl, whisk together the peanut butter, coconut sugar, vanilla, flax egg.
- Combine the wet to the dry ingredinets and stir until combined. Then add in the rolled oats and chocolate candies and mix in.
- Using a tablespoon, scoop out the cookie dough and form into a ball. Place onto a baking sheet lined with parchment paper and lightly flatten the dough.
- Bake at 350 for 10-12 minutes and enjoy!
