PrintGolden Cauliflower Soup

- 1 head Cauliflower
- 3 large Carrots
- 1 White Onion
- 1 clove Garlic
- 1 cup Frozen Corn
- 1 cup Soy Milk
- 4 cups Vegetable Stock
- 1 tbsp Curry Powder
- 1 tsp Tumeric
- 1 tsp Paprika
- 1/4 tsp Saffron
- Cracked Pepper to taste
Chop and saute the onion and garlic until translucent in color
Add in the chopped carrots and cauliflower. Cook down until cauliflower has sofened.
Then add the spice and allow them to toast for a minute on medium heat.
Then add in four cups of veggie stock and soy milk.
Allow everything to boil for 15 minutes or until cauliflower is completly soft.
Using an emersion blender or regular blender, blend until completly smooth. Once blended, add back into the pot and add the corn.
Crack in some fresh black pepper and enjoy!
