Ingredients

  • 1 head Cauliflower
  • 3 large Carrots
  • 1 White Onion
  • 1 clove Garlic
  • 1 cup Frozen Corn
  • 1 cup Soy Milk
  • 4 cups Vegetable Stock
  • 1 tbsp Curry Powder
  • 1 tsp Tumeric
  • 1 tsp Paprika
  • 1/4 tsp Saffron
  • Cracked Pepper to taste

Instructions

  • Chop and saute the onion and garlic until translucent in color
  • Add in the chopped carrots and cauliflower. Cook down until cauliflower has sofened.
  • Then add the spice and allow them to toast for a minute on medium heat.
  • Then add in four cups of veggie stock and soy milk.
  • Allow everything to boil for 15 minutes or until cauliflower is completly soft.
  • Using an emersion blender or regular blender, blend until completly smooth. Once blended, add back into the pot and add the corn.
  • Crack in some fresh black pepper and enjoy!
