Preheat your oven to 350°F (190°C).
In a blender or food processor, combine silken tofu, nutritional yeast, turmeric, garlic powder, onion powder, salt, and pepper. Blend until smooth.
If you're adding vegetables, first saute before folding them into the mixture.
Grease a silicone mold or muffin tin.
Pour the tofu mixture into the mold or muffin tin, filling each section almost to the top.
Bake in the preheated oven for 25-30 minutes or until the tops are set and slightly golden.
Allow the vegan egg bites to cool for a few minutes before removing them from the mold. Serve warm and enjoy!
