Vegan Egg Bites – this super simple and healthy breakfast only takes a few minutes to make which you can meal prep for the week.

If you aren’t a sweet breakfast person, then these healthy vegan egg bites are such a simple and delicious on-the-go meal or snack. You can flavor them however you like, maybe add some veggies, vegan cheese, or vegan bacon. The possibilities are endless.

Unlike traditional egg bites, these vegan “egg” bites are made with tofu! Instead of eggs, vegan egg bites often use plant-based ingredients to achieve a similar texture and flavor.

Not only is this recipe delicious, its made from all whole food plant-based ingredients. Rather than using an egg replacement like Just Egg, this recipe uses tofu! So this vegan egg bite recipe is a great way to get all the flavors of an egg but without all the oil and additional fat.

Recipe Ingredients

You’ll need the following ingredients to make these effortless vegan egg bites:

Firm Tofu: When using tofu, try to squeeze as much water out as possible.

Nutritional Yeast: This will give the egg bites a delicious cheese flavor.

Black Salt: This is an amazing Indian spice which is also called kala namak. This spice is often described as “eggy,” because of its high sulfur content much like an actual chicken egg. You can find black salt online like Amazon or at your local Indian grocery store.

Tumeric: A little pinch of turmeric goes a long way. We aren’t using it for the flavor but for color to give it the yellow egg-like color.

Plant Milk: Any unflavored and unsweetened plant milk will do.

Vegan Cheese: A little sprinkle of vegan cheese brings this dish to life! If you prefer a more whole-food plant-based cheese option, you could add some of my homemade cheese sauce either to the mix or dunk them in it once baked.

Veggies: Any veggies that you have on hand will work as long as they are chopped into bite-sized pieces. I love using spinach, onion, tomato, mushrooms, and zucchini.

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a blender or food processor, combine silken tofu, nutritional yeast, cornstarch, olive oil, turmeric, garlic powder, onion powder, salt, and pepper. Blend until smooth.
  3. If you’re adding vegetables, fold them into the mixture.
  4. Grease a silicone mold or muffin tin.
  5. Pour the tofu mixture into the mold or muffin tin, filling each section almost to the top.
  6. Bake in the preheated oven for 20-25 minutes or until the tops are set and slightly golden.
  7. Allow the vegan egg bites to cool for a few minutes before removing them from the mold.
  8. Serve warm and enjoy!

  • 1/2 cup soy milk
  • 1/4 cup nutritional yeast
  • 1/2 tsp turmeric
  • 1/2 tsp black salt or regular salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Optional add-ins: diced vegetables (bell peppers, spinach, tomatoes, etc.), vegan cheese and or diced vegan bacon

Instructions

  • Preheat your oven to 350°F (190°C).
  • In a blender or food processor, combine silken tofu, nutritional yeast, turmeric, garlic powder, onion powder, salt, and pepper. Blend until smooth.
  • If you're adding vegetables, first saute before folding them into the mixture.
  • Grease a silicone mold or muffin tin.
  • Pour the tofu mixture into the mold or muffin tin, filling each section almost to the top.
  • Bake in the preheated oven for 25-30 minutes or until the tops are set and slightly golden.
  • Allow the vegan egg bites to cool for a few minutes before removing them from the mold. Serve warm and enjoy!
