Golden Cauliflower Soup
Rich, creamy and full of flavor

Ingredients
- 1 head Cauliflower
- 3 large Carrots
- 1 White Onion
- 1 clove Garlic
- 1 cup Frozen Corn
- 1 cup Soy Milk
- 4 cups Vegetable Stock
- 1 tbsp Curry Powder
- 1 tsp Tumeric
- 1 tsp Paprika
- 1/4 tsp Saffron
- Cracked Pepper to taste
Instructions
- Chop and saute the onion and garlic until translucent in color
- Add in the chopped carrots and cauliflower. Cook down until cauliflower has sofened.
- Then add the spice and allow them to toast for a minute on medium heat.
- Then add in four cups of veggie stock and soy milk.
- Allow everything to boil for 15 minutes or until cauliflower is completly soft.
- Using an emersion blender or regular blender, blend until completly smooth. Once blended, add back into the pot and add the corn.
- Crack in some fresh black pepper and enjoy!
