HOW TO MAKE THE QUICKEST AND EASIEST VEGAN TOFU RICOTTA

Break out your trusty food processor or high-speed blender and let’s get to work.

Take the firm tofu block out of the package and pat dry with a paper towel. No need to press the tofu, just make sure it isn’t super wet or the water from the package is going into the food processor. Once you pat it dry, cut the tofu into squares. This doesn’t need to be perfect, it just makes it easier for the food processor to break it down.

Pulse the tofu in the food processor a few times until it starts to get creamy in texture. Once the tofu is no longer in big chunks, add in the apple cider vinegar, lemon juice, nutritional yeast, garlic cloves, onion powder, sea salt, and Italian seasoning. The Italian seasoning is optional, but it adds a nice flavor when cooking Italian-style dishes like plant-based lasagna.

If your food processor needs a little help, add in a splash of water to loosen the vegan ricotta up.
