Overnight oats are no-cook oatmeal that surprise surprise, you mix up and place in the refrigerator overnight (or for an hour). They’re great because when prepared, you have a grab-and-go breakfast in the morning that could be served cold or heated up. Overnight oats

Chunky monkey was brought to us by the kings of ice cream, Ben and Jerry’s. It is a combination consisting of bananas, nuts, and dark chocolate. A powerhouse of delicious flavors. Props to you Ben and Jerry’s for birthing the amazing and iconic flavor that is synonymous with our favorite childhood treat.

What You Need to Make Chunky Monkey Overnight Oats
  • (GLUTEN FREE) ROLLED OATS: Rolled oats are my favorte oats for overnight oats. They absorb the liquid the best and they turn soft overnight.
  • PB FIT POWDER: It makes the chunky monkey overnight oats have that quinticental peanut butter taste. Not to mention it is lower in fat than traditional peanut butter. If you are not a powdered peanut butter fan then feel free to use real peanut nutter, be aware the overnight oats won’t be low in calorie density. I love using PB Fit’s brand because it tastes the most like peanut butter.
  • ALMOND MILK : Feel free to use whatever milk you drink such as oat, cashew, rice, soy. Almond milk tends to have the lowest calories which is why I prefer it.
  • WATER : YES! You can make overnight oats with water and they will turn out amazing. I prefer to use a 50/50 ratio of water and plant milk in my overnight oats, but feel free to use only water or only milk.
  • VANILLA EXTRACT
  • CACAO POWDER
  • LIQUID STEVIA (OPTIONAL): An opional addition. Feel free to use what ever liquid sweetner of your choosing. A little maple sryup or agave nectar would be a great alternative. Or, you could even throw in a chopped date for natural sweetness.
  • CINNAMON
  • BANANA: The combination with the peanut butter and cacao powder makes it a successful recipe that you don’t want to miss! You can either slice it into the overnight oats or mash it before hand. Best to use rips. bananas.
  • CHOCOLATE CHIPS OR CACAO NIBS: They would be a great topping to add in the morning or whenever you plan on eating the oats. I used my raw vegan brownie as my chocolately element.
  • COCONUT FLAKES: Not a traditional chunky money recipe but it adds a nice crunchy topping.

Chunky Monkey Overnight Oats

This Chunky Monkey Overnight Oats is a fun and delicous breakfast you can make the night before or it can be enjoyed as an afternoon snack.

Ingredients

  • 1 cups rolled oats
  • 1 banana
  • 2 tbsp cacao powder
  • 2 tbsp PB fit powder
  • Liquid stevia
  • 1 tsp vanilla
  • 1/4 tsp Cinnamon
  • 1/2 cup water
  • 1/2 cup plant milk

Instructions

  • Add rolled oats, pb powder, cacao powder and cinnamon to a medium jar with a lid. Mix together with a fork.
  • Then add in the water, plant milk, sliced banana, vanilla and a few drops of liquid stevia. If you don't have stevia, you can sub with a tablespoon of maple sryup, honey or omit all together. Mix with a form until all the dry ingredients are combinded.
  • Screw on the lid and place in the refrigerator for up to an hour. You can top the overnight oats with chocolate chips, cacao nibs, coconut flakes and more banana, or enjoy as is on the go.
